Did you know?

Cucumber and tomatoes are a good source of Vitamin C. Try not to peel cucumber as the skin contains goodness.

Serves 4


  • 150g feta cheese, diced
  • 3 tomatoes, diced
  • 1 red onion, sliced finely
  • 1 small, firm cos lettuce, chopped
  • 1 cucumber, chopped
  • 50g olives, without stones
  • 1 lemon, juice only
  • 2tbsp extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp dried oregano


  • Crumble the feta cheese into a bowl.
  • Stir in the chopped tomatoes, onion, lettuce, cucumber and the olives.
  • Add the lemon juice, oil,and vinegar.
  • Mix in the oregano.
