Cucumber and tomatoes are a good source of Vitamin C. Try not to peel cucumber as the skin contains goodness.
Serves 4
Ingredients
- 150g feta cheese, diced
- 3 tomatoes, diced
- 1 red onion, sliced finely
- 1 small, firm cos lettuce, chopped
- 1 cucumber, chopped
- 50g olives, without stones
- 1 lemon, juice only
- 2tbsp extra virgin olive oil
- 3 tbsp red wine vinegar
- 2 tbsp dried oregano
Instructions
- Crumble the feta cheese into a bowl.
- Stir in the chopped tomatoes, onion, lettuce, cucumber and the olives.
- Add the lemon juice, oil,and vinegar.
- Mix in the oregano.
