Smoked haddock & sweetcorn chowder

Serves 4
Ingredients
- 2 tsp vegetable oil
- 2 onions, chopped
- 3 cloves garlic, chopped
- 1½ tsp dried sage
- 6 medium potatoes, chopped into dice shapes
- 3 cups (600ml) water
- I fillet of smoked haddock
- 1½ cups (300ml) milk
- 2 x 325g tins of sweetcorn, drained
- pepper
Instructions
- Put enough oil to cover the bottom of the pan then cook the onions, garlic, sage and potatoes for 5-10 minutes.
- Pour in water and bring to the boil.
- Turn down the heat, add the fish.
- Cover and simmer gently for about 15 minutes.
- Add milk and sweetcorn then liquidise until the soup is thick & creamy.
- Add pepper for seasoning.
- Serve
